Creating A Large Wound Tutorial
This is a interesting zombie makeup video showing the basic construction of a wound with wax (more subtle and controllable than latex and paper or cotton). Using wax and a spatula is a great way to create varried wounds when continuity is not an issue.

2d Zombie Demo
Not really a tutorial, but a demo showing the use of highlight and shadow. Amazing affects can be achieved using only the illusion of form and light. This technique is more like painting than traditional makeup.
